Bechamel Sauce
Ingredients:
- 2 tablespoons rice flour (or any flour like whole wheat, oat or even toasted barley flour)
- 1 tablespoon sesame butter (or any nut butter like cashew or almond)
- 1/2 onion, chopped
- 2 scallions, chopped (optional)
- 2 cups water
- 1/2 teaspoon salt
- 1 teaspoon oil
Preparation:
- In a saucepan saute onion and scallions in oil until flavorful (4 or 5 minutes).
- Add flour, sesame butter, and salt diluted in water.
- Bring to a boil and simmer for 15 minutes over a low flame, half-covered with lid.
A pinch of cumin, coriander, nutmeg, fresh basil, rosemary, or thyme produces a surprisingly different effect each time.
For a tasty and nutritious variation on this basic theme, try adding a cup of mashed black beans, lentils or aduki beans.
