Bechamel Sauce



  1. In a saucepan saute onion and scallions in oil until flavorful (4 or 5 minutes).
  2. Add flour, sesame butter, and salt diluted in water.
  3. Bring to a boil and simmer for 15 minutes over a low flame, half-covered with lid.

A pinch of cumin, coriander, nutmeg, fresh basil, rosemary, or thyme produces a surprisingly different effect each time.

For a tasty and nutritious variation on this basic theme, try adding a cup of mashed black beans, lentils or aduki beans.
